Stop. Don't stir.
The two-minute rescue
Pull the pot off the heat immediately. Stirring drags the burnt layer through everything.
Pour 2 tablespoons of cold water around the inside edge. Not the centre — the edge.
Lid back on. Wait 5 minutes. The steam lifts the stuck layer without you touching it.
Serve from the top
Scoop rice from above only. Leave the bottom alone.
What you'll find:
- Loose, fluffy rice: eat it.
- A golden, crispy layer: that's tahdig — beloved in Persian cooking. Serve it separately.
- Black, bitter crust: it's done. Scrape and discard.
The stuck layer releases on its own as the pot cools.
Prevent it next time
Once the water fully absorbs, cut the heat to its lowest setting.
Fold a dish towel and lay it under the lid. It catches dripping steam before it pools at the bottom and restarts the whole cycle.
