My mother kept her yeast in a small tin on the windowsill above the radiator. It's the kind of storage that works beautifully until it doesn't. She made bread every Thursday, for years, without a problem. Then one winter she made four flat loaves in a row before she accepted that the slow, steady warmth had killed the yeast months earlier. She wasn't wrong to trust what had worked before. She just hadn't checked.
Dough that refuses to rise is almost always one of three things: dead yeast, water that was too hot or too cold when the dough was mixed, or a kitchen so cold that fermentation has simply ground to a halt. The fix depends on which one you're dealing with.
Check the yeast first
If you added yeast without proofing it beforehand, here is a quick test. Poke a small hole in the surface of the dough and lean in close. Alive dough smells faintly sour and yeasty — like bread is already happening, quietly. Dead dough smells of raw flour and nothing else.
If the yeast is dead, this batch cannot be saved. There is no leavening left and baking it will give you a dense, gummy brick rather than a loaf. Start again with a fresh packet.
Before you do, check the expiry date on what you had. Yeast stored in a warm place can die months before the printed date.
The dough is probably just cold
If the yeast was fresh and properly activated, cold is the more likely culprit. Fermentation slows noticeably below 20°C and nearly stops below 10°C. A kitchen in January — particularly a stone-floored one, or one where a window has been open — can sit well under that for hours without anyone noticing.
The fix is warmth and patience.
Fill a large bowl or your sink with warm water — around 38°C, which is comfortably warm on the back of your hand but not hot enough to make you pull away. Sit the covered dough bowl inside it and check every 30 minutes. Dough that looked completely flat after two hours in a cold room will often show real movement within another hour of this gentle heat.
An oven with only the light on reaches around 27–30°C, which is ideal. Set the dough inside on a rack, cover it with a damp cloth, close the door, and leave it alone.
If the water was the problem
Water above 46°C kills yeast on contact. Water below 20°C won't wake it up at all. If you mixed the dough with water from the hot tap without checking the temperature, or with water that was barely lukewarm, that's likely what went wrong.
There's no fixing this particular dough by adding more yeast — the new yeast won't distribute evenly once the dough is mixed. But if you catch it early, within the first 30 minutes, you can knead in a small amount of fresh yeast dissolved in the correct-temperature water. It won't be as even as starting fresh, but it will usually produce a loaf.
The one thing worth remembering
Most bread failures come down to impatience or to trusting old yeast.
Dough that smells right, with fresh yeast in it, will almost always rise if you give it the right warmth and enough time. Two hours in a cold room becomes 45 minutes next to a radiator. The schedule printed in a recipe assumes a warm kitchen — your kitchen in winter is not that kitchen.
My mother now keeps her yeast in the fridge, where it stays dormant and stable rather than slowly cooking. She's been baking good bread ever since. Thursday is still bread day.
